Barbecue isn't an Indian dish. But we've made it our own!

There is always that one friend who orders barbecue every time you’ll order in or go
out to eat. Their love for barbecue has mesmerized you and you have to admit you’re
secretly in love with barbecue too, and secretly snack on a piece even when you're
dieting.

Non vegetarians do not hesitate to dig in when a big plate of chicken barbecue is
served with garlic mayo dip and tender, fresh kuboos, even if they haven't ordered it.
The plate is usually empty in a matter of minutes and then everyone moves on to
their main courses.

The global craze for barbecue all started out  when the Spanish first arrived in the
Caribbean. They had the habit of slow-cooking meat over a wooden platform and they
called it barbocoa. In the 19th century, this technique became well established in
South America because of the large population of pigs.
Pork meat was soon the primary meat used in all barbecues. Soon, cornbread
emerged as the chosen side dish for barbecue meals. This was because corn grew
better than wheat in the humid southern climates.
The barbecue style of cooking allowed for a different variety of foods to be cooked all
at once and this led to the barbecue becoming one of the top go-to choices for all
large gatherings during festivals or picnics.

Of course, the style of cooking barbecue varies from country to country and within
those countries, from region to region. Koreans use thin slices of beef and pork for
their barbecue meals, served with rice. Argentinians have the asado, which is a
marinade-free dish thats cooked in a smokeless pit. In Mongolia, they cook a stir-fry
type of dish that they call a barbecue.
Predominantly, the true essence of barbecue is found in America.
The African-American communities refer to barbecue as their ‘soul food dish’.

In India, the meat is usually left to marinate for long periods of time, in a tangy and
colorful mix of spices and yogurt. With crispy skin that tears off easily and meat that
is tender and juicy, barbecue has won the hearts of the nation.
